Happy weekend! I can’t believe that another Saturday has already rolled around. Our days have been jam-packed with impromptu shopping trips, endless organization and taking care of some minor house projects. I have a feeling that the house projects will never end ;-)  Our main priority this week was narrowing down some wood samples for flooring. So many things to think about and, um, those samples are SMALL! However, we’re getting there! I’ve gotten into the kitchen and broken in the stove and oven, so I’m starting to get back into the swing of things! What are you doing this weekend?

Happy Saturday! How has the first week or so of May treated you? Here in Pittsburgh, it’s been sunny, warm and the flowers and trees are finally blooming. Yesterday it even smelled like summer. Isn’t it crazy how you can smell seasons? My absolute favorite is when I get that first sniff of fall air – it’s fabulous! Right now, though, I’m thrilled about the nice weather. My Chief Culinary Consultant and I are less than two weeks from closing on our house, so we’ve been busy bees trying to get things organized and ready for the move. The countdown is on!

Happy weekend! I’m not sure that I’ve ever been so relieved to usher in a Saturday. It’s been an emotional roller coaster of a week with all of the events that have transpired in Boston. I’ve consumed more ice cream in the last five days than I have in the previous five months. Whatever it takes, right? What I Bookmarked This Week

Recipes and posts from other blogs that I thought looked especially delicious and that I thought you would like, too:

Coconut Cupcakes with Coconut Easter Nests (The Novice Chef)
I love baking with coconut during the spring and these cupcakes are perfect for the Easter holiday!

Eggplant Parmesan (Table for Two)
My Chief Culinary Consultant’s dad makes an awesome eggplant parm, but I’ve never made one myself. This one looks so cheesy and amazing!

Oreo Icebox Cake (Cookies and Cups)
Icebox cakes always remind me of my grandma, and I love the idea of using Oreo cookies instead of graham crackers.

Salted Dark Chocolate Cupcakes (Gimme Some Oven)
I’ve never seen such beautiful cupcakes! I’ll take at least two, please!

Upside-Down Blood Orange Cake (Bakers Royale)
This cake is an absolutely gorgeous way to showcase blood oranges. A perfect winter citrus dessert.

What was the best thing you ate this week??

Have a delicious weekend!
